Crackle Spice Drops (aka Diet Cookies) Recipe

If these cookies are in the house, you know we are on a diet. And if we're on a diet, these cookies are definitely in the house. They are quite possibly the only way that I manage to stick to healthy eating for the 3 or 4 weeks at a time that I am able to keep my willpower in check. This is an old Weight Watchers recipe that I printed out in 2003. They are a little dry (hey, they're a diet cookie), but they're soft and chewy and actually very good.


Ingredients:
  • 1/2 cup margarine, softened
  • 1/2 cup unpacked brown sugar
  • 1 large egg
  • 1 Tbsp vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 Tbsp pumpkin pie spice
  • 1/4 cup powdered sugar
Directions:
  1. Preheat oven to 375°F.
  2. Beat together margarine and brown sugar until nice and creamy.
  3. Add egg and vanilla. Beat again until light and fluffy.
  4. Gently stir in flour, baking soda, salt, and pumpkin pie spice.
  5. Roll heaping teaspoonfuls of dough into balls. Roll in powdered sugar to coat. Place on baking sheet. Bake for 7 to 8 minutes
Yields approximately 36 cookies.

Hi Gwen..so how are they diet cookies?? They look like normal ones to me..low on sugar..good but still have plenty of flour. Do you just allow one per day or something? Curious!!

Does this mean that you're on a diet? ;) They look good. Another good WW recipe is a box of spice cake mix, small can of pumpkin and 1 c semi sweet choc chips. Mix and bake at 350 or 375 for 8 min or so. Yummy pumpkin spice cookies.

Those look really good (through the eyes of a dieter, I'll take cookies in any shape or form). I'm trying these for sure....now if I could just not follow them up with some ice cream or something it might work!
